~ Chocolate Mocha Pudding Cake ~
1 cup all-purpose flour
2 t baking powder
1/4 t salt
1 cup sugar, divided
1/4 cup plus 2 T unsweetened cocoa, divided
1 1/2 T instant coffee granules
1/2 cup 1% low-fat milk
3 T vegetable oil
1 t vanilla extract
vegetable cooking spray
1 cup boiling water
2 1/4 cups vanilla ice cream
Preheat oven to 350F.
Coat an 8 inch square pan or baking dish with cooking
spray and set aside. Combine flour, baking powder,
salt, 2/3 cup of the sugar, 1/4 cup of the cocoa, and
coffee granules in a large bowl. Combine milk, oil,
and vanilla; add to flour mixture, stirring well.
Pour into prepared dish. Combine remaining 1/3 cup
sugar and remaining 2 tablespoons of cocoa. Sprinkle
over batter. Pour boiling water evenly over batter.
Do not stir. Bake for 30 minutes or until cake
springs back when touched lightly in center.
Serve cake topped with ice cream.
Makes 9 servings

For gift giving bake cake in a decorative disposable
aluminum covered pan. Leave baked cake in pan.
Embellish pan with ribbon. Add recipe card.
