~ Chocolate Mayonnaise Cake ~
2 cups flour
2 t baking soda
1 1/4 cups cocoa
1/2 t salt
1 cup mayonnaise
1 cup sugar
1 cup cold coffee
2 t vanilla
~Frosting~
2 T butter
1 cup powdered sugar
1 to 2 t milk
1 t vanilla
Preheat oven to 350F.
Combine flour, baking soda, cocoa and salt. In a bowl,
blend mayonnaise and sugar at medium speed. Gradually
beat in coffee and vanilla. Add dry ingredients and
beat until well blended; batter will be thick. Spread
into a greased and floured 11x7 pan. Bake for 30 - 35
minutes or until done. Cool and frost. For frosting:
Blend all ingredients together, adjusting milk until
the desired consistency is achieved.

For gift giving bake cake in a decorative disposable
aluminum covered pan. Leave baked cake in pan.
Embellish pan with ribbon. Add recipe card.
