~ Chocolate Cake ~
with Vanilla Sauce
2 cups all-purpose flour
1 3/4 cups sugar
1/2 cup cocoa powder
1 T baking soda
1 t salt optional
1 cup buttermilk
2/3 cup vegetable oil
1 t vanilla extract
1 egg, lightly beaten
1 cup hot strong brewed coffee
1 cup sugar
2 T cornstarch
1 cup water
2 T unsalted butter
1 t vanilla extract
Preheat oven to 350F.
Sift first 5 ingredients together in a bowl. Add next
5 ingredients and combine. Batter will be thin. Pour
into a buttered and floured 9x13 inch baking pan.
Bake 30 minutes or until tester comes out clean when
inserted in center. Combine sugar and cornstarch in
a heavy saucepan. Add water. Bring to a boil over
medium high heat, stirring constantly. When mixture
begins to thicken, remove from heat. Stir in butter
and vanilla. Serve sauce over cake. If gift giving
package Vanilla Sauce in a canning jar.
Makes 16 servings

For gift giving place cake on a decorative holiday plate.
Give with a basket containing favorite tea mixture, tea
infuser, teacup or coffee mug, and canning jar of Vanilla
Sauce. Embellish basket with greenery and ribbon. Add
gift tag and recipe card.
