~ Caramel Apple Cupcakes ~
1 pkg spice cake mix
2 cups chopped peeled tart apples
20 caramels
2 T milk
1/2 cup finely chopped pecans, toasted
Preheat oven to 350F.
Prepare cake batter according to package directions;
fold in apples. Fill 12 greased or paper-lined jumbo
muffin cups three-fourths full. Bake for 20 minutes
or until a toothpick comes out clean. Cool for 10
minutes before removing from pans to wire racks to
cool completely. In a saucepan, melt the caramels
and milk over low heat until smooth. Cool for a
while so icing will not drip down sides of cupcakes
Spread caramel over cupcakes. Sprinkle with pecans.

Great gift for a neighbor. Package muffins in
cellophane bag. Place bag of muffins in a gift
basket that is fabric lined. Add a package of
coffee beans and a pair of coffee mugs. Tie
with a raffia bow. Add gift card and recipe card.
