~ Candy Cane Cake ~
1 pkg white cake mix with pudding
1/2 t red food coloring
1 cup water
1/2 t peppermint extract
1/4 cup oil
crushed candy canes
3 egg whites
peppermint candy
Glaze (recipe below)
Preheat oven 350F.
Grease and flour 12 cup Bundt cake pan. Beat cake mix,
water, oil and egg whites in a large bowl on low speed
for 2 minutes, scraping bowl constantly until moistened.
Pour 2 cups of batter into prepared pan. In separate
bowl mix 3/4 cup of remaining batter, food coloring and
peppermint extract to make pink batter. Carefully pour
pink mixture over white batter in pan. Then carefully
pour remaining white batter over the pink. Bake
45 - 50 minutes. Cool 10 minutes. Invert on wire
rack. Remove pan. Cool cake completely. Spread
with glaze and sprinkle top with crushed candy.
Put whole candy in middle of top of cake.
~Glaze~
1 cup powdered sugar
1 T water
Stir in additional water 1
teaspoon at a time until smooth.

For gift giving decorate a plate with enamel or
ceramic paint. Let dry. Place cake on plate.
