~ Black Bottom Cupcakes ~
1--8 oz pkg cream cheese
1/3 cup sugar
1 egg
1/8 t salt
1--6 oz pkg semisweet chocolate chips
2 1/4 cups all-purpose flour
1 1/2 cups sugar
1/3 cup cocoa
1 1/2 t baking soda
3/4 t salt
1 1/2 cups water
1/3 cup plus 3 T salad oil
2 t vanilla
Preheat oven to 350F.
Beat cream cheese, sugar, egg and salt until
smooth. Stir in chocolate chips and set aside.
Sift flour, sugar, cocoa, baking soda and 3/4
teaspoon salt into large bowl. Beat in water,
salad oil and vanilla. Fill paper muffin cups
1/3 full of chocolate batter. Top each with a
heaping teaspoon of cream cheese mixture.
Bake for 30 minutes.
Makes 24 cupcakes
