~ Best White Chocolate Cheesecake ~
1 cup shortbread cookie crumbs
3 T finely chopped, toasted slivered almonds
1/4 cup butter or margarine, melted
2--8 oz pkgs cream cheese, softened
1--6 oz pkg white baking bars, melted and cooled
2/3 cup sugar
2/3 cup sour cream
1 t vanilla
10 oz jar seedless raspberry preserves
1 cup fresh or frozen loose pack, lightly sweetened red raspberries
1 to 2 T raspberry liqueur (optional)
Preheat oven to 350F.
In small bowl, combine cookie crumbs and almonds. Stir in melted
butter or margarine. Press crumb mixture onto the bottom of an
8-inch springform pan. Set aside. For filling, beat cream cheese
and cooled baking bars with an electric mixer on medium high speed
in large mixing bowl until combined. Beat in sugar until mixture
is fluffy. Add eggs, sour cream and vanilla and beat on low speed
until just combined. Pour over the crust. Place on a shallow baking
pan. Bake for 45 minutes or until center is nearly set when you shake
it gently. Cool 15 minutes. Loosen from sides of pan. Cool 30
minutes more; remove sides of pan. Cool completely. Cover and
chill at least 4 hours. In a saucepan, melt preserves over low
heat. Add raspberries and heat gently until sauce simmers. Cool.
Stir in raspberry liqueur. Cover and chill until cool. For gift
giving package sauce in a canning jar. Store jar in refrigerator.
Cut cheesecake into 8 wedges and drizzle
some of the sauce over each serving.
For gift giving place cake on a decorative holiday plate.
Give with a basket containing a package of coffee beans,
a pair of coffee mugs, and canning jar of Sauce.
Embellish basket with greenery and ribbon.
Add gift tag and recipe card.
