~ Apple Cranberry Coffee Cake ~
2 cups apples, peeled, thinly sliced
1/4 cup brown sugar, packed
1 T lemon juice
3/4 t cinnamon
1/3 cup dried cranberries
1 cup all-purpose flour
1/2 t baking soda
1/4 t salt
2 T butter, softened
1/3 cup granulated sugar
1 egg 1
1 t vanilla
1/2 cup plain yogourt (2%)
2 T slivered almonds, optional
Preheat oven to 350F.
Spray an 8 inch round cake pan with PAM Cooking Spray.
For Cake: Combine flour, baking soda, and salt. Cream
butter and sugar in small mixer bowl until blended. Add
egg and vanilla, beating until smooth. Add flour mixture
and yogourt alternately, mixing lightly after each addition.
Spread batter evenly in greased pan. Arrange apple mixture
on top. Sprinkle with almonds. Bake for 23 - 28 minutes,
or until cake starts to pull away from sides of pan. Cool
10 minutes, then remove to serving plate. For Topping:
Combine all ingredients for topping in small saucepan.
Cook over medium heat, stirring often, about 5 minutes,
or until apples are tender-crisp. Drain. If giving as
a gift package Topping in a canning jar. Store in
refrigerator until ready to use.
May be store for a day or two.
Use wrapping paper to decoupage a plate. Place cake
on plate. Decoupaged plate is for decorative use only.
Wipe clean with damp cloth. Give with jar of Topping.
