~ Cinnamon Raisin Walnut Bread ~

1 pkg dry yeast
1 cup warm water
4 1/2 to 5 cups all-purpose flour
1/2 cup granulated sugar
3/4 t salt
1/2 cup butter or margarine, melted and divided
2 eggs
1 cup raisins
vegetable oil cooking spray
1/3 cup brown sugar, firmly packed
1 T ground cinnamon
1/2 cup finely chopped walnuts
2 cups confectioners' sugar
1 t vanilla extract
2 1/2 T water

In a small bowl, dissolve yeast in 1 cup warm water.
In a large bowl, combine 4 1/2 cups flour, granulated
sugar, and salt. In a small bowl, combine 6 tablespoons
melted butter and eggs. Add butter mixture and yeast
mixture to dry ingredients; stir until a soft dough forms.
Add raisins to dough. Turn onto a lightly floured surface.
Knead about 5 minutes or until dough becomes smooth and
elastic and raisins are evenly distributed, using additional
flour as necessary. Place in a large bowl sprayed with
cooking spray, turning once to coat top of dough. Cover
and let rise in a warm place 1 to 1 1/2 hours or until
double in size. Ina small bowl, combine brown sugar and
cinnamon. Turn dough onto a lightly floured surface and
punch down. Divide dough in half. Roll each half into a
7x12 inch rectangle. Brush with remaining melted butter.
Sprinkle each rectangle with cinnamon mixture to within
1 inch of edges. Sprinkle with walnuts. Beginning at
1 short edge, roll up each rectangle jellyroll style.
Pinch seams to seal. Place loaves, seam side down, in
2 greased 4 1/2 x 8 1/2 inch loaf pans. Cover and let
rise in a warm place 1 hour or until almost double.
Preheat oven to 350F. Bake 28 - 33 minutes or until
bread is golden brown. Cool in pans 10 minutes. Remove
loaves from pans and cool completely on a wire rack. In
a small bowl, combine confectioners' sugar, vanilla, and
water; stir until smooth. Ice loaves of bread. Let icing
harden. Store in an airtight container.
Makes 2 loaves of bread.

For gift giving, wrap loaves with Saran Wrap and then wrap
with a kitchen towel. Embellish wrapped loaves with Christmas
greenery and ribbon. Add gift tag. An added touch...give
wrapped loaves in a gift basket with a small bread board
and bread knife.
