~ Zucchini Bread ~
4 eggs
3 cups flour
3/4 cup cooking oil
4 t baking powder
1 1/2 cup sugar
1 t salt
2 cups grated zucchini
2 t lemon peel
1 t vanilla
1 cup chopped walnuts
Preheat oven to 350F.
Beat eggs until light and foamy. Add oil, sugar,
zucchini and vanilla. Mix together flour, baking
powder, salt add lemon peel. Add to egg mixture
until blended. Stir in walnuts. Pour into 2
greased 9x5 loaf pans. Bake for 1 hour or until
test done.
Makes 2 loaves

Tie with Christmas ribbon and small ornament.
