~ Toffee Banana Bread ~
3/4 cup butter
1 1/2 cups sugar
4 eggs
1 1/2 t vanilla extract
3 cups all-purpose flour
1 1/2 t baking soda
1 1/2 t salt
1/2 t cinnamon
4 - 5 large ripe bananas, mashed
1 cup toffee bits**
(**crumbled Heath Bars or Skor Bars)
Preheat oven to 350F.
Grease and lightly flour 2 loaf pans. In a
mixing bowl cream together the butter and sugar.
Add the eggs and vanilla, and mix until creamy.
In a separate bowl combine the flour, baking soda,
salt and cinnamon. Blend the dry ingredients
into the creamed mixture. Fold in the mashed
bananas and the toffee bits. Pour the mixture
into the prepared pans. Bake for 1 hour.
Makes 2 loaves

For gift giving set each loaf on top of small
bread board. Wrap in Saran Wrap. Embellish with
a homespun fabric bow and gift tag.
