~ Sweet Tropical Loaves ~
1--18 1/4 oz pkg yellow cake mix
1--8 oz can crushed pineapple, undrained
1 cup evaporated milk
2 eggs
1/2 t ground nutmeg
1/2 cup flaked coconut
~Glaze~
(glaze optional)
1 1/2 cups confectioners sugar
2 T milk
1 to 2 drops coconut extract, optional
2 T flaked coconut, toasted
Preheat oven to 325F.
Grease two 8x4 inch loaf pans. In a large mixing
bowl, combine the first five ingredients. Beat on
low speed just until moistened. Beat on high speed
for two minutes. Stir in the coconut. Pour into
prepared loaf pans. Bake for 45-50 minutes or until
a toothpick inserted into the center comes out clean.
Cool for 10 minutes before removing from pans to wire
racks to cool completely. For the Glaze: In a small
mixing bowl, combine sugar and milk until smooth.
Add the extract, if desired. Drizzle over the loaves.
Sprinkle with coconut.
Makes 2 loaves

For gift giving decorate a plate with enamel or
ceramic paint. Let dry. Wrap loaves and plate
with Saran Wrap. Add Christmas greenery, ribbon
and gift tag.
