~ Strawberry Streusel Muffins ~
1 1/2 cups flour
1/2 cup sugar
2 t baking powder
1/4 t salt
1 egg, lightly beaten
1/2 cup unsalted butter, softened
1/2 cup milk
1 t almond extract
1 cup fresh strawberries, sliced
~Streusel Topping~
1/2 cup chopped toasted almonds
1/2 cup sugar
1/2 cup flour
2 T unsalted butter, melted
1/8 t almond extract
Heat oven to 350F.
Line 12 muffin cups with paper liners. In a medium
bowl, combine flour, sugar, baking powder, and salt.
Make a well in the center. In a separate bowl, beat
egg, butter, milk and extract. Add to dry ingredients
all at once and stir until just combined, add sliced
strawberries. Do not over-mix. Fill each cup 3/4 full
with batter. To make topping, combine all ingredients
into one bowl. Sprinkle evenly over top of each muffin.
Bake for 20 - 25 minutes.
Makes 12 muffins

Great gift for a coworker. Wrap muffins individually
with Saran Wrap. Place muffins in a gift basket that
is fabric lined. Add a package of coffee beans and a
pair of coffee mugs. Tie with a raffia bow.
