~ Strawberry Bread ~
2--10 oz pkgs of frozen strawberries (chopped)
4 eggs
1 1/4 cups vegetable oil
3 cups flour
1 1/4 cups chopped pecans
1 t baking soda
1 t salt
3 t cinnamon
2 cups sugar
Preheat oven to 350F.
Mix together the undrained strawberries, eggs
and oil. Sift the dry ingredients into the
strawberries, saving about 1/2 cup of the
flour. Stir to blend thoroughly. Stir the
nuts into the saved flour and add to the bread
mixture. Stir well. Pour into 2 well-greased
and lightly floured 9x5 inch loaf pans (or 7
mini loaf pans). Bake for 60 minutes (or 45
minutes for small pans) or until a toothpick
inserted in center comes out clean.
Makes 2 large or 7 mini loaves

For gift giving, wrap loaves with Saran Wrap
then wrap with kitchen towels. Embellish
wrapped loaves with Christmas greenery and
ribbon. Add gift tag. An added touch...give
wrapped loaves in a gift basket with a small
bread board and bread knife.
