~ Quick 'N Easy Carrot Bread ~
2 cups sifted all-purpose flour
1 1/2 t baking soda
1 1/2 t cinnamon
1/2 t salt
1 1/2 cups Wheat Chex cereal*
(*crushed to 3/4 cup)
1/2 cup chopped walnuts
2 eggs
3/4 cup vegetable oil
3/4 cup sugar
1 1/2 cups carrot pieces**
(**cut 1/2-inch thick)
1 t vanilla
~Glaze~
1/2 cup sifted confectioners sugar
1 T milk
3/4 t lemon juice
Preheat oven to 350F.
Grease an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
In large bowl sift together flour, baking soda,
cinnamon and salt. Stir in wheat chex crumbs and
walnuts. Process eggs, oil, sugar, carrot pieces
and vanilla in blender until smooth. Pour over
dry ingredients. Stir just until moistened. Turn
into pan. Bake 60 - 65 minutes until tester
inserted in center comes out clean. Let cool 15
minutes before removing from pan. Cool
completely. Top with glaze.
~Glaze~
Combine confectioners sugar, milk and
lemon juice. Beat until smooth and pour
slowly over bread.
Makes 1 loaf

For gift giving decoupage a papier-mache box
with graphics. Place sliced loaf in box.
Embellish box with ribbon and a sprig of holly.
Add gift tag.
