~ Quick Apple Carrot Bread ~
1 1/2 cups peeled, shredded apples
1/2 cup shredded carrot
1/4 cup butter
1/2 t lemon extract
2 eggs
1 3/4 cups flour
2/3 cup sugar
1 t baking powder
1 t baking soda
1/2 t salt
1/2 chopped nuts
Preheat oven to 350F.
Grease bottom only of 9x5 or 8x4 loaf pan. Blend
first 5 ingredients. Add remaining ingredients,
except or nuts. Beat 3 minutes at medium speed.
Stir in nuts. Pour batter into prepared pan.
Bake 50 - 60 minutes or until toothpick inserted
in center comes out clean. Remove from pan to
cool. Refrigerate any leftovers.
Makes 1 loaf

Bake in a disposable pan. Leave loaf in pan
and wrap with Saran Wrap and top with
ribbon. Add gift tag.
