~ Pumpkin Ginger Muffins ~
2 cups flour
2 t baking powder
1 t baking soda; sifted through a tea strainer
1 t ground cinnamon
1/2 t salt
2 cups pumpkin puree
2 eggs
1/2 cup brown sugar
1 t vanilla
1/3 cup crystallized ginger; chopped
3/4 cup pecans; chopped
Preheat oven to 400F.
In large bowl, combine flour, baking powder, baking soda,
cinnamon, and salt. Toss lightly with a fork. In separate
bowl, combine pumpkin, eggs, brown sugar, and vanilla and
stir well. Make a well in center of dry ingredients; pour
in wet ingredients. Add ginger and pecans and stir until
ingredients are just incorporated. Do not over mix. Line
12-cup muffin tin with paper liners or grease the cups
generously. Fill the cups evenly with the batter and bake
for 20 minutes. Remove muffins and cool.
Makes 12 muffins

lined. Add a package of coffee beans and a pair
of coffee mugs. Tie with a raffia bow.
