~ Pumpkin Chocolate Chip Muffins ~
1 cup canned pumpkin
2 eggs
1 cup brown sugar, firmly packed
1/4 cup vegetable oil
3 cups baking mix (Bisquick)
1 t pumpkin pie spice
1 cup chocolate chips
3/4 cup chopped nuts, toasted
Preheat oven to 400F.
Line a muffin pan with paper muffin cups. In a
large bowl, combine pumpkin, eggs, brown sugar,
and oil. Add baking mix and spice; beat just
until blended. Stir in chocolate chips and
nuts. Fill muffin tins about two-thirds full.
Bake 14 - 18 minutes until golden brown or until
a toothpick inserted in center of muffin comes
out clean. Serve warm or cool on a wire rack.
Store in an airtight contained.
Makes 1 1/2 dozen muffins
