~ Pumpkin Apple Streusel Muffins ~
2 1/2 cup all-purpose flour
2 cups sugar
1 T pumpkin pie spice
1 t baking soda
1/2 t salt
2 eggs, slightly beaten
1 cup canned pumpkin
1/2 cup vegetable oil
2 cups peeled, finely chopped apples
Streusel Topping (recipe follows)
Preheat oven to 350F.
In a large bowl, combine first five ingredients.
Set aside. In a medium bowl, combine eggs, pumpkin
and the oil. Add liquid ingredients to the dry
ingredients. Stir with a wooden spoon just to moisten.
Gently stir in the apples. Spoon batter into greased
and floured or paper-lined muffin cups. Fill to 3/4
full. Sprinkle the Streusel Topping over the batter.
Bake for 35 - 40 minutes or until a toothpick inserted
in center of each muffin comes out clean.
Makes 18 muffins
~Streusel Topping~
2 T flour
1/4 cup granulated sugar
1/2 t cinnamon
2 T butter
In a small bowl, combine flour, granulated sugar,
and cinnamon. Cut in butter and mix with fork until
the topping is crumbly.

Embellish basket with Christmas greenery
and ribbon. Add gift tag.
