~ Poppy Seed Bread ~
2 boxes white cake mix
2 small pkg instant coconut pudding
8 eggs
1/4 cup poppy seeds
1 cup vegetable oil
2 cups hot water
Preheat oven to 350F.
Beat all the ingredients together until blended.
Butter two 9x5x3 inch loaf pans. Pour batter
into the pans-dividing evenly. Use two loaf pans
or one Bundt pan. Bake about 50 minutes or until
inserted toothpick comes out clean. Cool on racks.
Sprinkle with confectioner's sugar while still
warm on top of each loaf. When ready to serve,
slice into fairly thick 1/2 inch or so slices
and overlap on a pretty platter.
Note: Use lemon pudding and yellow
cake mix for an alternative.
Makes two loaves or 1 Bundt

For gift giving decorate a plate with enamel
or ceramic paint. Let dry. Wrap sliced loaf
and plate with Saran Wrap. Add Christmas
greenery, ribbon and gift tag.
