~ Pineapple Tea Loaf ~
1/2 cup orange juice
2 T boiling water
3 T oil
1 egg, beaten
1 cup sugar
2 cups all-purpose flour
1 1/2 cups dried chopped pineapple
3/4 cup chopped pecans or 1/2 cup sweetened coconut
Preheat oven to 350F.
In a medium bowl, combine the orange juice, water and
oil. Add egg and mix well. Add sugar and mix. Add flour
and baking powder and combine gently until just moist.
Fold in pineapple and nuts or coconut. Bake in a greased
loaf pan for 50 - 60 minutes, or until done.
Makes 1 loaf

For gift giving package sliced loaf in a holiday tin.
Decorate tin with country graphics. Embellish with
a homespun-fabric bow.
