~ Pineapple Carrot Loaf ~
3 eggs
1 1/2 cups oil
1--14 oz tin crushed pineapple, with juice
3 t vanilla
2 cups sugar
2 cups grated carrot
1 cup chopped nuts (optional)
3 1/2 cups flour
1 t salt
3 t cinnamon
3 t baking powder
1 t baking soda
Preheat oven to 350F.
Combine all ingredients in a large bowl and divide
batter into 2 buttered loaf pans. Bake for approx.
1 hour. This loaf is very "crumbly" when fresh -
put in fridge for at least 24 hours before slicing.
Makes 2 loaves

Bake in a disposable pan, wrap with Saran Wrap
and topped with ribbon. Add gift tag.
