~ Pear Pecan Bread ~
3 cups flour
1 t baking soda
1/4 t baking powder
1 t salt
1 t cinnamon
1 t ginger
1 cup chopped pecans
3/4 cup oil
3 eggs, beaten
2 cups sugar
2 cups** peeled, grated fresh pears
(**about 3 pears)
1 T vanilla
Preheat oven to 325F.
Combine flour, soda, baking powder and spices.
Blend oil, eggs and sugar; add dry ingredients.
Fold in vanilla, pears and pecans. Bake in 2 greased
8x4 inch loaf pans for 1 hour and 15 minutes.
Makes 2 loaves
