~ Peaches 'n Cream Muffins ~
1 egg
1/2 cup skim milk
1/2 cup fat-free nondairy creamer
1/4 cup vegetable oil
2 cups cake flour, sifted
1/4 cup granulated sugar
3 t baking powder
1/2 t salt
1 cup diced fresh peaches, peeled & pitted
Preheat oven to 400F.
Beat egg, mix in milk, nondairy creamer and
oil. In a separate bowl, combine the flour,
sugar, baking powder and salt. Make a well in
the dry ingredients and pour liquid ingredients
into well; mix just until moistened. Stir in
the diced peaches. Spray muffin pan with vegetable
cooking spray. Fill each muffin cup about 2/3
full. Bake 20 - 25 minutes. Remove from pan
and let cool.
Makes 8 to 10 large muffins

For gift giving individually wrap muffins in Saran Wrap.
Place in gift basket with fabric napkins. Embellish
basket with Christmas greenery and ribbon.
