~ Peach & Brown Sugar Muffins ~
4 cups flour
2/3 cup brown sugar
2 t baking powder
1 t salt
1/2 t baking soda
1/4 t allspice
2 cups sour cream
2 eggs
1/2 cup oil
1 cups chopped peaches, fresh or canned**
(**canned=15 oz size)
Preheat oven to 400F.
Stir together flour, sugar, baking powder, baking
soda, salt and allspice. In a separate bowl combine
sour cream, eggs and oil. Stir in the peaches. Add
to flour mixture. Stir just until moistened. Spoon
batter into paper lined muffin tins about 2/3 full.
Bake for 20 - 25 minutes.
Note: Make recipe into 5 mini loaves of bread.
Spray loaf pans with cooking spray, fill about
1/2 to 2/3 full with batter, and then bake for
30 minutes. Let cool and then remove from pans.
Makes 20 muffins or 5 mini loaves

Great gift for a neighbor. Place individually
wrapped muffins/loaves in a gift basket that is
fabric lined. Add a package of coffee beans and
a pair of coffee mugs. Tie with a raffia bow.
