~ Orange Breakfast Loaf ~
1/3 cup butter or margarine
1 1/4 cups sugar
1--8 oz sour cream
2 eggs
1 t orange extract
1 t grated orange zest
1 3/4 cups flour
1/2 cup quick cooking oats
1 t baking powder
1/2 t baking soda
1/4 t salt
Preheat oven to 350F.
Grease a 5 1/2x9 1/2 inch loaf pan (or 4 small
mini loaf pans). In a large bowl, cream butter
and sugar until fluffy. Add sour cream, eggs,
orange extract, and orange zest; beat until
smooth. In a small bowl, combine flour, oats,
baking powder, baking soda, and salt. Add dry
ingredients to creamed mixture; stir until well
blended. Spread batter into prepared pan. Bake
55 - 60 minutes (40 minutes for small pans) or
until toothpick comes out clean. Cool in pan.
Makes 1 large or 4 mini loaves

For gift giving bake in aluminum pan. Leave loaf
in pan. Wrap loaves with Saran Wrap and then
with tulle, gathering ends at top and embellish
the top with ribbon and a Christmas ornament.
