~ Mango Bread ~
1/2 cup butter or margarine, softened
3/4 cup sugar
1 egg
1/4 cup sour cream
2/3 cup mashed ripe mangoes
1 t baking powder
1 t baking soda
2 cups flour
1/2 t lemon rind
1/2 cup chopped nuts
3/4 cup golden raisins
Preheat oven to 350F.
Cream butter and sugar. Add eggs, sour
cream, mangoes, sifted dry ingredients,
lemon rind, nuts and raisins. Bake in a
loaf pan at for 50-60 minutes.
Makes 1 loaf

For gift giving bake in aluminum pan. Leave
loaf in pan. Wrap loaf with Saran Wrap and then
with tulle, gathering ends at top and embellish
the top with ribbon and a Christmas ornament.
Add gift tag.
