~ Lemon Bread or Muffins ~
6 T butter or margarine, softened
1 cup sugar
2 large eggs
1 1/2 cup flour
2 t baking powder
1/2 cup milk
rind and juice of one lemon**
(**rind for the batter and juice for the glaze)
1/2 cup walnuts or pecans, ground fine (optional)
~Bread~
Preheat oven to 325F.
Lightly spray a regular loaf pan. Cream butter,
sugar and eggs together. Add dry ingredients
alternately with milk and finely grated lemon rind.
Add nuts if desired. Bake for about 45 minutes.
Remove from oven and prick top of bread all over
with toothpick. Glaze top with a mixture of 1/3
cup sugar and the lemon juice.
~Muffins~
Preheat oven to 400F.
Bake in large muffin tins for 20 minutes or until
golden brown. Glaze as above. To make lemon
poppy seed muffins add 1/2 cup poppy seeds to
the batter.
