~ Fruit Cocktail Bread ~
1--8 oz cream cheese, softened
1 cup margarine, softened
1 1/2 cups sugar
1 1/2 t vanilla
4 eggs
2 1/4 cups flour
1 cup fruit cocktail, drained
1 1/2 t baking powder
Preheat oven to 325F.
Mix cream cheese, margarine, sugar, eggs
and vanilla until fluffy. Fold in flour
and baking powder. Stir in fruit cocktail.
Pour into 2 greased loaf pans. Bake for
1 hour. Cool in pan 10 min. Drizzle with
icing sugar glaze when cool, if desired.
Makes 2 loaves
