~ Date & Apricot Pumpkin Bread ~
1 egg
2 egg whites
1 cup sugar
1 cup canned solid-pack pumpkin
1/3 cup salad oil
1/2 cup orange juice
2 cups all-purpose flour
1 t baking soda
1/2 t baking powder
1/2 t ground cinnamon
1/2 t cloves
1/2 t nutmeg
1/2 t ginger
1/2 cup chopped dates
1/2 cup chopped dried apricots
Preheat oven to 350F.
In large bowl; beat together egg whites, sugar, pumpkin,
oil and orange juice. In another bowl, stir together;
flour, baking soda, baking powder, cinnamon, cloves,
nutmeg and ginger. Add to egg mixture and beat to blend.
Stir in dates and apricots. Pour into lightly greased
5x9 inch loaf pan. Bake approximately 1 hour or until
wooden pick inserted in center comes out clean. Let
cool 15 minutes then turn onto rack to finish cooling.
Makes 1 loaf

Bake in a disposable pan. Leave loaf in
pan and wrap with Saran Wrap and top with
ribbon. Add gift tag.
