~ Cranberry Orange Bread ~
1/4 cup butter or margarine, softened
1 cup sugar
1 egg
1 t grated orange peel
2 cups flour
1 t baking powder
1 t salt
1/2 t baking soda
3/4 cup orange juice
1 cup chopped fresh or frozen cranberries
1 cup golden raisins
Preheat oven to 350F.
In a large mixing bowl, cream butter and sugar. Beat
in egg and orange peel. Combine the dry ingredients;
add to creamed mixture alternately with orange juice.
Fold in cranberries and raisins. Pour into a greased
9x5x3 inch loaf pan (or 5 small loaf pans). Bake for
60 - 65 minutes (or 40 minutes for small loaf pans)
or until a toothpick inserted near the center comes
out clean. Cool for 10 minutes; remove from pan
to a wire rack to cool completely.
Makes 1 large loaf or 5 small loaves

For gift giving, wrap loaves with Saran Wrap then wrap
with Christmas kitchen towels. Embellish wrapped loaves
with Christmas greenery and ribbon. Add gift tag.
