~ Cranberry Buttermilk Muffins ~
1 large egg
1 cup buttermilk
1/3 cup vegetable oil
1 cup flour
1 1/2 t baking powder
1/2 t baking soda
1/2 t salt
1 cup quick oats
1/2 cup brown sugar, packed
1/2 cup nuts, chopped
1/2 cup dried sweetened cranberries, chopped
Preheat oven to 350F.
Beat egg, buttermilk and oil with a whisk. Add remaining
ingredients and stir just until blended. Spoon into 12
muffin cups prepared with nonstick spray. Bake for about
25 minutes, testing with a toothpick.
Makes 12 muffins

Place individually wrapped muffins in basket.
