~ Cranberry Apricot Quick Bread ~
1/2 cup margarine
3/4 cup sugar
2 eggs
3 cups flour
1 T baking powder
1 t salt
1/2 t baking soda
1 cup orange juice
1 t grated orange rind
1 cup coarse chopped cranberries
1/2 cup chopped dried apricots
Preheat oven to 350F.
Beat margarine and sugar until fluffy. Add eggs,
one at a time, mixing well. Add combined dry
ingredients alternately with juice, mixing well
after each addition. Stir in cranberries, apricots
and orange rind. Pour into greased and floured 9x5
inch loaf pan. Bake for 1 hour and 15 minutes. Cool
5 minutes, remove from pan.
Makes 1 loaf

For gift giving decorate a plate with enamel or
ceramic paint. Let dry. Wrap loaf and plate
with Saran Wrap. Add Christmas greenery,
ribbon and gift tag.
