~ Confetti Loaf ~
3 eggs, beaten
1/2 cup vegetable oil
1/2 cup milk
3 1/2 cups flour
1 cup sugar
1 t baking powder
1 t baking soda
1 t cinnamon
1/2 t salt
1 1/3 cups shredded coconut
1/2 cup maraschino cherries
1/2 cup raisins
1/2 cup chopped pecans
Preheat oven to 350F.
In a mixing bowl, combine eggs, oil and milk. In a
separate bowl, combine flour, sugar, baking powder,
baking soda, cinnamon and salt. Add to the liquid
mixture. Stir in coconut, cherries, raisins and pecans.
Pour batter into a greased loaf pan and bake for 50
minutes or until a toothpick inserted in the center
comes out clean.
Makes 1 large loaf or 3 small loaves

For gift giving leave loaves in aluminum pans. Wrap in
Saran Wrap and then wrap with tulle, gathering ends at
top and embellish the top with ribbon. Add gift tag.
