~ Boston Brown Bread ~
1 cup All-Bran cereal
1/2 cup raisins
1 cup flour
1/2 cup sugar
1 t baking soda
1/4 t salt
1 T molasses
1 cup whole milk mixed with 1 t distilled white vinegar
Butter--for the can or pan
Preheat oven to 425F.
In a bowl, combine the bran cereal, raisins, and milk
mixture. Let the mixture sit for 30 minutes. Place
a kettle of water on high heat to come to a boil. Have
on hand a 1 lb coffee can or an 8 1/2 x 4 1/2 x 2 1/2
inch loaf pan. Butter the can or loaf pan generously.
In another bowl, mix the flour, sugar, baking soda,
and salt. Add the bran mixture and molasses. Stir well.
Pour the batter into the can or pan and place a
buttered piece of aluminum foil over the top. Firmly
seal the edges of the foil. Place the can or pan in
the middle of a roasting pan. Pour enough boiling
water into the baking dish to come halfway up the
sides of the can or pan. Bake the bread for 1 1/2
hours or until it is firm to the touch and cooked
through. Let the bread cool in the can or pan and
turn it out onto a wire rack to cool completely.
Cut into thick slices for serving.
Makes 1 loaf
