~ Blueberry Banana Oat Bread ~
1 3/4 cups all-purpose flour
1/4 cup quick-cooking oats
2 T oat bran
1/2 cup granulated sugar
2 t baking powder
1/2 t salt
2 T vegetable oil
1 egg
1 1/2 cups mashed bananas
3/4 cup frozen blueberries
Preheat oven to 350F.
Lightly grease a 9x5 inch loaf pan. In a large
bowl, stir together flour, oats, oat bran, sugar,
baking powder and salt. In a separate bowl, using
an electric mixer, beat oil, egg and banana until
combined. Pour mixture over dry ingredients and
stir just until combined. Gently fold in frozen
blueberries. Spoon into prepared pan. Bake for
70 - 80 minutes or until a cake tester inserted
in the center comes out clean. Let cool in pan
on rack for 10 minutes. Remove from pan
and serve warm.
Makes 1 loaf

For gift giving, wrap loaf with Saran Wrap then
wrap with kitchen towel. Embellish wrapped loaves
with Christmas greenery and ribbon. Add gift tag.
An added touch...give wrapped loaf in a gift basket
with a small bread board and bread knife.
