~ Banana Crunch Bread ~
~Candied Pecan Topping~
2 egg whites
1/2 cup brown sugar, firmly packed
1 t ground cinnamon
1 t vanilla extract
1/8 t salt
3 cups chopped pecans
~Cake~
1/2 cup butter or margarine, softened
1/2 cup shortening
2 3/4 cups sugar
4 eggs
2 egg yolks
1 1/4 cups mashed bananas (approx. 3 medium bananas)
1 1/2 t vanilla extract
3 cups all-purpose flour
1/4 t baking powder
1/4 baking soda
1 cup buttermilk
Preheat oven to 325F.
For candied pecan topping, beat egg whites in a
medium bowl until soft peaks form. In a small bowl,
combine brown sugar, cinnamon, vanilla, and salt; beat
into egg whites. Fold in pecans; set aside. For cake,
cream butter, shortening, and sugar in a large bowl until
fluffy. Add eggs and egg yolks, 1 at a time, beating well
after each addition. Beat in bananas and vanilla. In a
medium bowl, combine flour, baking powder, and baking soda.
Alternately beat dry ingredients and buttermilk into batter,
beating until well blended. Spoon into 8 greased 3x5 3/4
inch loaf pans. Spoon pecan topping over batter. Bake
50 - 60 minutes or until toothpick inserted in center of
loaf comes out clean. Cool in pans 10 minutes. Remove
from pans and cool completely on a wire rack. Store in
an airtight container.
Makes 8 loaves
