~ Apple Streusel Muffins ~
2 cups flour
1 cup sugar
1 T baking powder
1 1/4 t cinnamon
1/2 t salt
1/2 t baking soda
2 large eggs
1 cup sour cream
1/4 cup butter, melted
1 cup apples** unpeeled and finely diced
(**about 1 apple)
~Topping~
1/4 cup sugar
3 T flour
1/4 t cinnamon
2 T cold butter
Preheat oven to 400F.
Grease 12 large muffin cups. In a large bowl
stir together the dry ingredients. In a small
bowl thoroughly combine eggs, sour cream and
butter. Add all at once along with the apple
to the dry ingredients. Stir until moistened,
about 20 -25 strokes then divide batter evenly
among the greased muffin cups. For the topping,
combine sugar, flour and cinnamon. Cut in butter
until mixture forms course crumbs. Sprinkle muffin
with streusel topping. Bake approximately 20 - 25
minutes or until when toothpick inserted into the
middle of a muffin comes out dry.
Makes 12 large muffins
NOTE: Make this as bread by putting the batter into
a large loaf pan sprinkling the topping on the top
of the batter. Bake at 375F for about 45 minutes.
