~ Apple Bread ~
3 eggs, beaten
2 cups sugar
1 cup oil
1 T vanilla extract
3 cups all-purpose flour
1 t baking soda
1 t cinnamon
3 to 4 apples, cored and chopped
1 cup chopped pecans
Preheat oven to 325F.
Combine eggs, sugar, oil and vanilla until
well mixed. Combine flour, baking soda and
cinnamon; stir into egg mixture. Fold in apples
and pecans. Divide equally between 2 greased and
floured 9x5 inch loaf pans. Bake for one hour
and 10 minutes.
Makes 2 loaves

For gift giving place wrapped loaf in a gift
basket that is fabric lined. Add a package of
coffee beans and a pair of coffee mugs.
Tie with a raffia bow. Add gift card.
