~ Apple Banana Bread ~
1 banana
1/3 cup applesauce
1/2 cup vegetable shortening
3/4 cup sugar
2 eggs
3 T buttermilk
2 cup flour, stirred and measured
1 t baking soda
1/2 t salt
Preheat oven to 350F.
Mash banana; add enough applesauce to measure
1 cup; set aside. Cream together shortening
and sugar. Add eggs; beat well. Add buttermilk
(may be substituted with sour milk.....1 T milk
plus 1 t vinegar) and banana and applesauce
mixture. Sift or mix together dry ingredients;
add to creamed mixture; blend well. Pour into
greased 8-1/2 x 2-1/2 x 4-1/2 inch loaf pan.
Bake for 45 minutes or until done.
Makes 1 loaf

For gift giving place wrapped loaf in a gift basket
that is fabric lined. Add a package of coffee beans
and a pair of coffee mugs. Tie with a raffia bow.
