~ Aloha Quick Bread ~
1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup mashed ripe bananas**
(**about 2 medium)
1/4 cup milk
1 T grated orange peel
1 t vanilla extract
1/2 t almond extract
2 cups all-purpose flour
1 t baking soda
1/2 t salt
1 cup flaked coconut
1/2 cup chopped nuts
1/2 cup crushed pineapple
Preheat oven to 350F.
In a mixing bowl, cream butter and sugar. Add the eggs,
one at a time, beating well after each addition. Beat
in banana, milk, orange peel and extracts. Combine flour,
baking soda and salt; add to the creamed mixture just
until moistened. Fold in the coconut, nuts and pineapple.
Transfer to a greased 9x5x3 inch loaf pan. Bake for 1 hour
and 20 minutes or until a toothpick inserted near the
center comes out clean. Cool for 10 minutes before
removing from pan to a wire rack.
Makes 1 loaf
