Spanish Red Beans & Rice
~ Mix in a Jar ~
1 tbsp minced onions
1 tsp dried minced garlic
1 tsp cumin
2 tsp paprika
2 tbsp chicken bouillon
2 cups white rice
2 cups dried red beans**
(**place in a small baggie)
Layer in wide-mouth 1-quart canning jar in order listed above
Place the red beans in baggie on top of the rice
Put the lid on the jar and tie a homespun fabric bow around the lid
As an added touch, tie a wooden spoon to the lid
Attach jar labels to the jar with the following instructions

~ Spanish Red Beans & Rice with Sausage ~
1 jar of beans & rice Mix
1 Italian or smoker sausage, sliced
1 medium bell pepper, diced
6-8 cups of hot water
Remove beans from beans & rice mix
Wash beans and place them in a microwave dish,
filling with water 1--1 1/2 inches over beans
Cover tightly with plastic wrap, then poke 3 small
holes in the top of the wrap with sharp knife
Microwave on high for 9 minutes, rotate and
microwave for 9 minutes more. Drain beans
and place in crockpot. Cover with 6-8 cups of
hot water. Cook on high for 3 hours
Brown sausage along with bell pepper
Add sausage mixture to the remaining
beans & rice mix. Stir this mixture into
the crockpot with the beans. Continue
cooking on high for 1 1/2 hours,
stirring occasionally
