Mexican Bean Soup
~ Mix in a Jar ~


3/4 cup dried pinto and red kidney beans
3/4 cup red kidney beans

~Seasoning Packet~
2 tbsp dried onion flakes
2 tbsp dried parsley flakes
1 tbsp chili powder
2 tsp ground cumin
1 tsp dried oregano
6 chicken bouillon cubes
1/2 cup uncooked white rice
1 cup small-cut pasta

Place beans in wide-mouth 1-quart canning jar
Place seasoning ingredients in a sandwich-size plastic bag
Place the rice and pasta in a sandwich-size plastic bag
Place both bags in jar with beans

Put the lid on the jar and tie a homespun fabric bow around the lid
As an added touch, tie a wooden spoon to the lid

Attach jar labels to the jar with the following instructions

~ Mexican Bean Soup ~

1 jar soup mix
8 cups water

Rinse and pick over beans
Place beans into a 4- to 5-quart heavy pot
with 4 cups water. Bring to a boil, cover
and remove from heat. Let sit 1 hour

Drain beans and return to pot
Add water and contents of seasoning packet
Bring to a boil, reduce heat, cover and simmer
1 hour or until beans are firm-tender
Stir in rice and bring to a simmer
Cover and simmer 15 minutes
Uncover, stir in pasta and 1/2 cup water
Simmer 10 minutes or until pasta is tender
