Pumpkin Cranberry Bread
~ Mix in a Jar ~
1 1/2 cups flour
2 1/2 tsp pumpkin pie spice
1 tsp baking soda
3/4 tsp salt
1 1/2 cups sugar
1/2 cup sweetened dried cranberries
Combine ingredients and place in wide-mouth 1-quart canning jar
Put the lid on the jar and tie a homespun fabric bow around the lid
As an added touch, tie a wooden spoon to the lid
Attach jar labels to the jar with the following instructions

~ Pumpkin Cranberry Bread ~
1 jar bread mix
3/4 cup pumpkin - (1 can=15oz)
1/2 cup vegetable oil
2 large eggs
1/4 cup orange juice or water
Preheat oven to 350F
Beat together pumpkin, vegetable oil, eggs
and orange juice or water in large mixer bowl
until blended. Add contents of jar stir until
just moistened. Spoon batter into greased and
floured 9 x 5-inch loaf pan. Bake for 60-65
minutes or until wooden pick inserted in center
comes out clean. Cool in pan for 10 minutes;
remove to wire rack to cool completely
Makes 1 loaf
