Texas Ranger Nine Bean Soup
~ Mix in a Jar ~
1 lb black beans
1 lb red kidney beans
1 lb barley pearls
1 lb pinto beans
1 lb Great Northern beans
1 lb navy beans
1 lb lentils
1 lb yellow split peas
1 lb green split peas
1 lb black-eyed peas
Mix beans together
Place bean mixture in wide-mouth 1-pint canning jar
Put the lid on the jar and tie a homespun fabric bow around the lid
As an added touch, tie a wooden spoon to the lid
Attach jar labels to the jar with the following instructions

~ Texas Ranger Nine Bean Soup ~
2 to 3 cups soup mix
1 lb ham, diced
1 large onion, chopped
1 clove garlic, chopped
1--10oz can Ro-tel tomatoes and green chiles
1--16oz can tomatoes and liquid, broken up
Salt and pepper, to taste
Wash and sort beans. Place in a Dutch oven
and cover with water 2 inches above beans
Let soak overnight. Drain beans. Cover with
water, and add the other ingredients. Bring to
a boil, reduce heat and simmer, covered, for
about 2 hours until the beans are done. Stir
occasionally to prevent sticking. Add a little
bit of water to prevent the sticking
Adjust seasonings
