Black Eyed Pea Soup
~ Mix in a Jar ~
3 1/2 cups dried black eyed peas
~Seasoning Packet~
1/2 cup dried minced onion
6 tbsp chicken bouillon granules
2 tbsp dried parsley flakes
1 tbsp sugar
2 tsp dried minced garlic
1 tsp chili powder
1 tsp onion powder
1/2 tsp pepper
1/2 tsp garlic powder
Mix and place the seasoning in a small plastic bag
Layer in wide-mouth 1-quart canning jar
Add 2 cups of the peas into canning jar
Place the seasoning packet on top of the peas
Add the remaining peas
Put the lid on the jar and tie a homespun fabric bow around the lid
As an added touch, tie a wooden spoon to the lid
Attach jar labels to the jar with the following instructions

~ Black Eyed Pea Soup ~
1 jar soup mix
12 cups water
2--14oz can of diced or crushed tomatoes
Remove seasoning packet and set aside
Rinse peas and place in microwave safe dish
Cover with water, 1 to 2 inches over the top
of the beans. Cover the dish loosely with
plastic wrap and microwave on high for
15 minutes, rotating after 7 minutes
Drain and rinse beans. Place beans in a
large soup pot. Add water, tomatoes and
seasoning packet. Cover, bring to a boil
Lower heat, cover and simmer 1 1/2 hours
or until beans are tender. Stir occasionally
